I recently made the most amazing stew and am officially obsessed! It’s vegan, gluten free, high in protein, only takes 25 minutes total for everything, and contains up to 6 servings!
- 3 cups chopped sweet potatoes, fresh or frozen
- 2 jalapeños, minced
- 4 cloves garlic, minced
- 1 teaspoon turmeric
- 1 teaspoon salt
- 1 14-ounce can fire roasted tomatoes
- 1 14-ounce can coconut milk
- 1/4 cup peanut butter
- 1–2 cups kale, chopped
- 1–2 cups water
Step 1: Add sweet potato, jalapeños, garlic, turmeric, salt, tomatoes, and coconut milk to InstaPot
Step 2: Cook on ‘stew’ (195 degrees) for 10 minutes
Step 3: Add peanut butter, kale, and water
Step 4: Cook at the same temperature for another 10 minutes
Step 5: Eat!
Side note: This also makes for a great freezer meal!
